These cupcakes were pretty simple! But, I like the look. A basic chocolate cupcake dipped in ganache, then topped with some white chocolate peppermint candy, chocolate crunchy stuff I made & some sprinkles to make it look fancy or something like that. <br />

I made the Birthday Cake (pictured above) with a little trouble, but it came together in the end. This truly is a glorified Funfetti Cake...like from a box...just WAY better. Because these recipes in the book are like recipes with recipes inside of recipes...inside of recipes...I took the idea, with the cake recipe & simplified it by using my own butter cream recipe. I'm not a production kitchen, much to many people's surprise! And I have to say, it turned out well.<br />

This cake looks like a giant mess! But, then once you look closer, you realize it really is a neat, organized mess in a perfect 6 inch circle. Then, you get to thinking, how the hell do you do that?! Acetate stripes & 6 inch cake rings. It really isn't as tough as it may seem!<br />

I followed the recipe above to a 'T' and everyone at work LOVED it. Then I added some dehydrated pineapple chips, a white chocolate truffle dusted in gold & gold sprinkles to make it extra fancy! Cause that is how I roll, people. I was also pretty thrilled with my 'ruffled' frosting technique. I hadn't had the opportunity to try it before now. Love. Next time...I am going to add a gradient of color to the frosting. Cannot wait!<br />

Then, I crushed Oreos, mixed them in and let it sit over night. This way the Oreos softened and I was able to get a smooth frosting that was nice and pipe-able. No chunks! Chunks are bad!<br />

This cake recipe really is awesome! The bananas add a nice texture to the cake, making it dense, but still keeping it moist. If you make this, be careful to chop the candy bars well & make sure they are fully mixed into the batter. But, I didn't want to make the simple, but super good vanilla bean ice cream into something weird (this time).<br />

The ice cream recipe is super simple - my standard<br />
<br />
2 C milk<br />
1 C Cream<br />
3/4 C Sugar<br />
2 T corn syrup <br />
2 T corn starch<br />
1 vanilla bean, scrapped<br />
1 1/2 oz cream cheese<br />

Put the milk, cream, vanilla bean seeds, sugar & corn syrup in a pot & bring to a rolling boil for 4 minutes.<br />
In s large bowl, while waiting for the milk mixture to boil, whisk the cream cheese to soften if up so the liquid will mix in easily & eliminate any lumps.<br />
Once the milk mixture has been at a rolling boil for 4 minutes (you can stir occasionally), add the corn starch/milk mixture.<br />

Then, pour hot mixture into the softened cream cheese & whisk until mixed well.<br />
Place this mixture into a container, cover it with plastic wrap touching the liquid surface & chill for at least 4 hours, but over night is better. <br />

Be sure the ice cream maker bowl is completely frozen (24 hours) and the mixture is completely chilled or it will not work. It should take 25-30 minutes to freeze. Then transfer the ice cream into a container & put in the freezer for 4 hours before serving. <br />

So, because I can't just let plain ice cream be good on it's own, I make some peanut brittle & salted caramel sauce to go with it! It is basically a meringue made with almond flour mixed in, which creates a batter. You simply pipe the batter into small or large circles on a baking pan, let the macarons dry for about 30 minutes, then bake. Not really as tough as I had heard.<br />

So, I got that...with out really knowing what I did correctly - ha.<br />

Anyhow, they were nice a crisp on the outside & chewy and good on the inside. I filled these vanilla flavored macarons with peanut butter butter cream. Yum.<br />

</tbody></table>I decided to attempt to make an ice cream that was dairy free, low in sugar & it happens to be low in fat (boo). Why?! Because as much as I LOVE, LOVE, LOVE ice cream, I really do my best to not eat dairy.<br />

Here is my variation on the Dark Chocolate Ice Cream from Jeni's Splendid Ice Creams. Want the recipe?!...keep reading!<br />

<u>Recipe</u><br />
<br />
<i>chocolate sauce </i><u><br />
</u><br />
1/2 C dark chocolate cocoa powder<br />
1/2 C hot water<br />
1/4 C agave<br />
<br />
<i>ice cream base</i><br />
2 C almond milk<br />
1 C coconut milk<br />
1/4 C agave<br />
1/4 t salt<br />
2 T cornstarch<br />
<br />
<u>Directions</u><br />
Combine the ingredients for the chocolate sauce in a sauce pan and bring to a boil, then take off the heat. <br />
For the ice cream base, combine the cornstarch with about 2 T of the almond milk & make a slurry (a paste you later pour into the mixture. This prevents the cornstarch from clumping).<br />
Pour the milks, agave & salt into a sauce pan & bring to a rolling boil.<br />
Once boiling (watch it or it will boil over), allow to boil for 4 minutes, while stirring occasionally.<br />
After the 4 minutes are up, add the cornstarch mixture while stirring & bring back up to a boil & let boil for 1 minute (until thicker).<br />
Take off the heat & add chocolate sauce & stir well.<br />
Allow to chill in the fridge over night.<br />
Pour mixture into ice cream maker & follow directions for your machine.<br />

</tbody></table>The cake was one of Oprah's favorite cakes - the recipe is <a href="http://www.oprah.com/food/David-Guass-Gateau-de-Bayou-with-Toasted-Salty-Caramel-Meringue">here</a>. It is made of a rather odd combination of hot sauce (like Tobasco), ginger water & cane syrup. Because it was baked in a bundt pan, which usually means a large amount of dense batter, it had to be baked for almost an hour. Which, is part of the reason I am slightly obsessed with bundt cakes right now. They get a nice, dark, but thin crust around the entire cake. This looks awesome on a light colored cake, but even if you have a darker colored cake - the nice, slightly crunchy, chewy texture of the cake crust is yummy!<br />

Then, the cake was frosted with a meringue that was toasted with a torch, of course! Fun & tasty. It was a nice light frosting that paired well with the spicy cake - much better suited to this cake than a butter cream would have been. <br />

Mainly, because of the base recipe & how perfect the texture of the ice cream is. Of course, all of the insane, unique flavor combs, are fun, too!<br />

<a name='more'></a>This is ice cream swirled with a raspberry sauce that I made, along with cream cheese frosting folded into it. I sandwiched it between 2 Cowboy Cookies, since I had dough left over in the freezer. All I cay say...it is GOOD!<br />

1 C milk<br />
1/2 C sugar<br />
1 t salt<br />
7-10 egg yolks <br />
<br />
1/4 - 1/2 C Nutella<br />
<br />
2 C heavy cream<br />
1 t vanilla<br />
<br />
<b>Directions</b>:<br />
Place egg yolks in a large bowl & break up with whisk.<br />
Pour heavy cream into a large bowl & set aside. <br />
Pour milk, sugar & salt in a sauce pan & bring to a simmer, then take off heat.<br />
While whisking egg yolks, slowly pour the hot milk mixture into the egg yolks & continue mixing until combined well.<br />
Pour mixture back into sauce pan & heat until the mixture thickens enough to coat the back of a spatula (about 180 degrees F).<br />
Once up to temperature, remove from heat, add Nutella & stir well. <br />
Once combined, pour mixture into heavy cream over a fine strainer.<br />
Stir the mixture well.<br />
Chill in fridge for at least 4 hours, but for up to a week.<br />
Once mixture is chilled, place in ice cream maker & follow instructions to operate machine.<br />

</tbody></table>Considering I have never had a Whoopie Pie before, I don't really know what to compare these to. But, the chocolate cake cookies with Peanut Butter filling...how could that be bad?!<br />

This recipe said it would make 12-17 pies (depending on the size you make them), however, I must have gone smaller than usual, because I ended up with <strike>36</strike> 48! Umm...anyone want some?!<br />
